Fresh Morel Mushrooms ~ Yummy
The last few years have been entirely too dry in the Spring for the tasty Morels to grow around our pine tree. There has been no lack of moisture this year however. In fact there was a record amount of rainfall in April.
Yesterday I looked and saw that at least a half dozen of the mushrooms had sprouted through the soil under the large tree near our front porch. This afternoon I saw a few more so I called our neighbor. This octogenarian loves these mushrooms and was at my back door within a few minutes. We both searched the area carefully and found some that we had not seen initially and he went away with more than a dozen.
My dad used to split the mushrooms and soak them in salt water to float any insects out of them. He would then saute them in some butter. That makes for some fine eating indeed.
